Tiger Chef’s Prepare for Annual Cowboy Breakfast

THCA students to cook thousands of tacos for over 40,000 hungry San Antonians
The 42nd annual Cowboy Breakfast is scheduled to take place on January 24, 2020, from 4:30-8:30 a.m. in the parking lot of Cowboys Dancehall. Sponsors and more than 300 volunteers produce the yearly event which has previously been recognized by the Guinness Book of Records as the World’s Largest Cooked Breakfast.
Over 30 of St. Philip’s College (SPC) Tourism, Hospitality and Culinary Arts (THCA) students will volunteer to prepare thousands of tacos for over 40,000 San Antonians. Students arrive promptly at 2:30 a.m. to prepare a variety of tacos including bacon, chorizo, sausage, beef and potato and egg. Proceeds fund scholarships for students in SPC’s THCA Program. The program is recognized as exemplary by both the Texas Higher Education Coordinating Board and the American Culinary Federation.
“We have always shared an appreciation for the Cowboy Breakfast Foundation as their work and donation greatly affects and impacts our scholarship recipients. The scholarship offers them an enhanced opportunity at improving their lives, the lives of their children and the lives of their future families,” said Frank Salinas, THCA Department Chair.
Last year, the Cowboy Breakfast Foundation presented SPC with a donation of $20,000 that was used to award scholarships to 10 students for the 2019-2020 academic year.
The event, sponsored by Jordan Ford, will include live entertainment, refreshments by What’s Brewing Coffee and Oak Farms, tacos, picante sauce by Simply Fresco, sausage wraps and biscuits and gravy, donated by C. H. Guenther (CHG), maker of Pioneer mixes.
CHG volunteers will be working side by side with THCA students, serving breakfast. The food is entirely free of charge.
