SPC Culinary Students Serve 15,000 Tacos and Earn $15,000 Scholarship at Cowboy Breakfast

The St. Philip’s College (SPC) Tourism, Hospitality and Culinary Arts Department received a $15,000 scholarship from the San Antonio Stock Show & Rodeo during the Annual Cowboy Breakfast on Jan. 30 at the Frost Bank Center, Lot 4.

Seventy-five St. Philip’s College Culinary Arts students participated in the early-morning event, arriving at 2 a.m. to begin food preparation. The breakfast ran from 5 to 10 a.m.

Under the leadership of Chef John Munoz, students prepared and served approximately 15,000 tacos total, including bean and cheese, bacon and egg, chorizo and egg, and sausage and egg.

The Cowboy Breakfast serves as the opening event for the San Antonio Stock Show & Rodeo Bar-B-Que Cook-Off weekend. Thousands of San Antonio residents enjoyed complimentary parking, breakfast tacos, coffee, and other beverages at no cost. The event also featured rodeo merchandise, live music, and family-friendly activities.

St. Philip’s College has partnered with the Cowboy Breakfast for more than 20 years, with total scholarship donations connected to the partnership reaching $65,000.

“This is my second year volunteering at the Cowboy Breakfast event. I wanted to help and mentor newer students, sharing the best advice I can to help them continue the tradition. I really enjoy meeting new faces in our Culinary Arts program and reconnecting with those I already know,” said SPC Culinary Arts Student Patricia Pardo.
